Our Story

Family, Food, Sports & Wellness. These four components are the driving forces behind Chef Andy Williams Culinary Services. Raised in the heart of Chicago’s north side, hanging out at the friendly confines of Wrigley Field, watching Bears football and building values at the local Boys Club, all influenced and laid the corner stone for my love of sports and the knowledge that there is no “I” in Team.

Working hard to better myself through education, I worked my way through the kitchen ranks to pay for school, learning life’s lessons and eventually meeting my business partner and the love of my life, Cindy.

Together, we have combined our two backgrounds, Cindy’s extensive catering & event coordinating expertise along with my culinary achievements and formulated a company based on delivering exceptional service and extraordinary cuisine.

Listening to our clients has been a major component to our success and the success of our clients and their families. When it comes to the menus we develop or the food we purchase, we focus on healthy, clean & wholesome based food products that provide the body with the nutrients it needs on a daily basis.

Our business was built and is continually growing because we work hard with our clients focusing on taking small steps towards change versus major overhauls. We don’t push diets, calories, fads or supplements onto our clients. We would rather focus on subtle lifestyle improvements, such as complete and routine based eating habits, sounder choices on the products that are purchased at the grocery store and developing a program customized to our client’s needs and lifestyles.

We have over 30 years of hospitality industry experience and we hope that what you take away from our story is that you recognize that we are a small company built on passion, faith, integrity and when you hire us, we are committed to you, our client, to assist you in obtaining your goals, just as we have worked hard to obtain ours.

I wake up everyday giving thanks for all that I have accomplished in life from my family to my career. Whether I had realized it or not, I seem to have focused my entire culinary career on the wellness and health of my clients. I work hard to practice what I preach by living a well balanced lifestyle. However, I face the same everyday challenges that my clients face because my hobbies are: the consumption of incredible foods, an incurable desire to taste as many craft beers (not all at the same time) as possible and tasting as many red & white wines from all over the world. I enjoy traveling to farms, markets, fields, hotels, restaurants or anywhere that promotes the experience of foods and flavors that support clean and wholesomeness. I share this knowledge and my experiences with my friends, family & clients and others on the wellness that food has to offer each and every one of us but most importantly I share these incredible experiences with my wife Cindy because its not fun exploring by yourself. I take my 30 years of culinary experience, my two hospitality degrees, my award winning career and I apply these skills to our business ensuring that our clients receive the best and most creative and customized programs possible for true success.

I’m a believer in living a healthy, well balanced lifestyle, which allows me to indulge in my passion for all types of food, wine and craft beers. Place a great burger, crisp homemade fries and a double IPA in front of me and I’m your best friend. I have over 30 years of experience working with successful individuals and corporations creating and producing all forms of catered and social events. My education from Paul Smiths College in Lake Placid, New York and the diversity of Florida International University in Miami, laid the ground work to my skill sets that I have developed over the years learning and understanding that the most important trait to the success of any business is listening to your client’s needs and desires. Exceeding your expectations and building lasting relationships with our clients, whether they be individual or corporate, is my mission for your success and ours.

Michelle Noble

The past three decades of my career have been divided between my two greatest passions – cooking and teaching. I started working in restaurants out of necessity as a young kid but my path made a distinct shift when my high school culinary arts teacher inspired me to do more. She sparked in me a desire to learn and encouraged me to fan the flames of my new found talent by continuing my education. That lead me to Johnson and Wales University where I completed degrees in both Culinary Arts and Food Service Education.

I quickly realized that teaching was a direction that I wanted to focus on. Over the next several years I worked in both food and beverage operations as a Chef and continued to develop my skills with the goal of becoming the best educator I could be. To that end I spent significant time as an instructor for an American Culinary Federation Apprenticeship program, a guest program instructor for the Disney Institute and an adjunct professor for Valencia Community College. Additionally I began to work towards a variety of industry certifications that would further support my experience and education. I added the credentials of Certified Chef de Cuisine and Certified Culinary Educator through the ACF as well as Certified Hospitality Educator from the American Hotel and Lodging Educational Institute.At this time I made the decision to do something I never thought I would do and that is to pursue a Master’s degree! I earned my Masters of Education from American Intercontinental University in Instructional Technology.

Lastly I was awarded the CHEP or Certified Higher Education Professional after years of continuing education coursework through the Center for Excellence in Education. I have spent the past 14+ years at Le Cordon Bleu College of Culinary Arts in Orlando. In this time I have served as a Chef Instructor, a Department Chair and now as the Director of Education. In the whole of my career to date, I have surrounded myself with like minded people who love food and wine as much as they love learning. The side effect of all this food loving is that we often find ourselves in bigger pants! I am no different so in an effort to “enjoy food responsibly” I aim to use my knowledge and experience to help people navigate the tasting, tempting, finger licking life of a foodie. I truly believe that making food education fun, accessible and of course delicious is essential in any sustainable food plan regardless of the ultimate goal.

Chef Lionel Heydel, founder of I-Chef USA (located in Orlando, Florida), is a classically French-Trained Chef. He has worked at Michelin starred restaurants in France. He is a member of the American Culinary Federation (ACF), a member of the Chaîne des Rôtisseurs USA, and is a certified Level 1 Sommelier with the Court of Master Sommeliers.

With more than 25 years of experience in the culinary industry, Chef Heydel has consistently demonstrated his skills. He has worked with various local and global companies to share his culinary talents. In addition, for the past decade, Chef Heydel has been influencing and coaching the future generation of Culinarians at a world-renowned private institution.

Gina Keefe is a Registered Yoga Teacher (RYT) with Yoga Alliance, which acknowledges the completion of a yoga teacher training with an approved and active Registered Yoga School (RYS) Gina has been providing private fitness sessions to Clermont locals for over 16 years. She has a Masters Degree in Education and has been teaching in varying capacities since 1985. Gina began her career in fitness by getting certified as a personal trainer after moving to Florida from upstate New York in 1996. A lifelong fitness enthusiast, Gina has a background in martial arts and was the 1995 New York State NPC lightweight bodybuilding champion.

Always seeking new avenues to wellness, Gina began the journey into yoga with a morning television program taught by Steve Ross called Inhale. In 2007 the opportunity arose to deepen her practice in a teacher training program. Since then Gina has studied and became National Yoga Alliance Certified at the highest level as a 500 hour Experienced Registered Yoga Teacher(E-RYT500) with thousands of hours of experience and training.

Gina has pursued Yoga Therapist training and certification in both the Wisdom Method and Phoenix Rising Schools of Yoga. She works extensively in individual therapeutic yoga sessions in which she applies yoga postures, breath work, meditation techniques and assisted stretches to encourage health and healing on both a physical and emotional level. She specializes in teaching proper alignment, safe practice and the practical applications of the yoga lifestyle in her classes.

In 2011 Gina opened a thriving yoga studio in Clermont, Florida.   As founder and owner of One Yoga and Fitness, Gina is bringing a long held vision into being. Her combined passion for yoga and her clear business ethics have guided the studio in multiple expansions since it’s opening.

In January of 2016 Gina established One Integrative School of Yoga, registering with Yoga Alliance as an approved yoga teacher trainer, and now offers Yoga Teacher Training Programs to prepare others to teach.

“It is my experience that yoga has the power to transform your life, body mind and spirit. I have used yoga as a powerful tool to help many athletes balance their training regimens and to improve performance by bringing balance, flexibility and awareness to body and breath. The practice of yoga has helped other clients overcome injuries and find healing from chronic pain. In my own experience, yoga has been pivotal in managing stress and taming anxiety. It is now my mission to share the countless gifts of yoga with anyone who will come to the mat with me. “Yoga has changed how I move through life both literally and metaphorically, I know it will change you too.”

Track & Field Coach

Gideon Labban is a professional Track and Field Coach with over 29 years experience in his field. He received his coaching education and certification from the International Association of Athletics Federations (IAAF). He has attained the IAAF’s highest certification, level 5 Chief Academy Coach.

Gideon is also an IAAF Course Director/Lecturer for over 16years, training approximately 300 Coaches in the Caribbean region.

He has trained athletes at Elementary, High school and National level, and he also has worked with Elite athletes at Olympic and World Championship level. He attended the 2000 Sydney, 2008 Beijing Olympic Games and the 2009 World Championships in Berlin. The Sprints and Hurdle events are his specialties but he is quite proficient in coaching the Middle distances, Throws and Jumps events.

He is very technically oriented with significant emphasis on Biomechanics of movement. He works very effectively and efficiently with both small and large groups, and possesses the competence of demonstrating the skilled component of most Track and Field events and other related Sports movements.

In the last 18 months Gideon was employed at Phenom Strength and Conditioning Facility in Ashburn, VA which is owned by former NFL Player Lemar Marshall. During that time he significantly improved the performances of Lacrosse, Football, Soccer players and track athletes, many of whom received Scholarships and are now on their way to College.

Gideon is very simplistic in his coaching methods but very effective in identifying the problematic areas that needs improvement, and provides specific protocols to correct them.
